Abstract
Transglutaminase is an enzyme that catalyses the formation of covalent bonds between adjacent proteins, thereby improving the gel structure of proteins and has important applications in the food industry. Streptomyces mobaraensis (Formerly Streptoverticillium ladakanum) is a source of microbial transglutaminase. This organism requires expensive media to grow and produce transglutaminase. In this chapter, it is discussed the feasibility of the biotechnological production of transglutaminase by S. mobaraensis grown on media made from hydrolysates of sorghum straw and the application of the obtained transglutaminase for improving the mechanical properties of fish gels.
